Egg Masala
Egg masala (notes as Lasaya Cooks)
Her kitchen was filled the scents of cumin, onions, and everything good. She greeted me at the door, and made me tea. As she cooked, I opened each container in her pantry and we laughed as I guessed what was in each one. We ate dinner discussing the importance of making friends outside of your own culture. We talked about the effects of fast fashion in India and her hometown. We shared stories from our childhood, and laughed about the differences and similarities between them.
Not ground cumin + Mustard seeds in pan
Then add in:
Onion (2-3)
Green chili (small amount lol)
Then add in:
Chili powder
Salt
Then add:
Little cut boiled eggs (4-5)
Then add:
(You can put 1/2 c of milk to boil for a different taste)
For the Dal:
Add the:
Cumin
Garlic
Mustard seed
Then Add:
Chili
1 onion
Salt
Then add:
Tomato
Let cook for while
Then add steamed lentils + extra water that is in the pan with it
Let boil for a while
Add lemon or tamran paste
If lemon, don’t add it when it’s too hot or it will taste sour!
